The Modern Presents Lunch

Lunch started with Marinated Prawns/Salad, followed by Roast Beef Tenderloin and closed with Crème Fraiche Cheese Cake.

Paired Wines

·        Sauvignon Blanc, Michel Redde, Pouilly-Fume, France 2011

This agreeably crisp dry wine is 100 percent estate grown and bottled from fruit from Michel Redde’s La Moynerie vineyard. The subsoils include limestone, kimmeridgian marl and clay with flint. The grapes are fermented in temperature controlled stainless steel, wooden tuns and half-wooden casks for 10-12 months on the lees until bottling.

Pale lemon to the eye, the nose discovers apples, pears, kiwi, citrus, stone, grapefruit and melon while the palate is delighted with apples, pears, kiwi, and citrus, stone, minerals and flint. The Redde leaves a delicious and refreshing memory with pleasant acidity.

·        Rose, Domaine de Triennes, Cotes de Provence, France 2015

Principal grapes include Cinsault blended with Grenache, Syrah and Merlot that are harvested at night to keep grapes cool upon arrival at the winery. The fruit is pressed after a few hours of skin contact and fermented at low temperature until dry.

Pale pink/coral to the eye, the nose finds strawberries and white flowers with a whisper of vanilla. The palate discovers notes of peaches and florals with a hint of tannin evolving into an interesting balance between a fruity sweetness and acidity.
